Blueberry Muffins

There are easier things in life than making blueberry muffins. One of them, for me, is sleeping. The other one is eating. And the third one is choosing George as my favorite Beatle after watching Scorsese’s documentary about him. I can’t think of anything else. So, if you’ve chosen your favorite Beatle, have slept and eaten, put your hands on it and bake some muffins. Play Abby Road, and by the time the album’s over, you will have eaten a freshly baked muffin or even two.  This is one of Bon Appetit’s classic recipes, with a couple tweaks of my own. You could even make a lemon-icing sugar drizzle to put on top for a sweeter finish.

  • Nonstick vegetable oil spray
  • 1½ cups all-purpose flour
  • 1 cup whole wheat flour
  • 1 cup granulated sugar
  • 2½ teaspoons baking powder
  • 2 teaspoons kosher salt
  • ½ teaspoon cinnamon
  • 2 cups fresh blueberries, divided
  • 2 large eggs plus 2 large egg yolks, beaten to blend
  • 1½ cups plain whole-milk yogurt
  • ½ cup (1 stick) unsalted butter, melted
  • 1 teaspoon finely grated lemon zest
  • 2 teaspoons fresh lemon juice
  • 2 teaspoons vanilla extract
  • 2 tablespoons raw or vanilla sugar

Preheat the oven to 425º. Spray a muffin tin with cooking spray. In a bowl mix together the flours, sugar, baking powder and salt. Add 1 1/2 C of the blueberries and coat them well. In a separate bowl, mix together the eggs, yolks, butter, yogurt, lemon juice and zest, cinnamon and vanilla. Mix everything together and fill the cupcake tins all the way up. Place some blueberries on top of each muffin and sprinkle with vanilla sugar. Bake for about 30 minutes, until golden on top.

Existen cosas más fáciles que hacer muffins de blueberries. Una de ellas es dormir; la otra es comer; y la tercera es escoger a George como tu Beatle favorito después de ver el documental de Scorsese. Así que si ya escogiste a tu Beatle favorito, dormiste bien, y desayunaste, pon las manos en la masa y cocina unos muffins de blueberry. Pon el album de Abby Road, ypara cuando termine, vas haber comido uno, o dos, muffins recién hechos con tus propias manos. Le puedes hacer un glaceado de azúcar glass y limón para más dulzura si gustas.

Muffins de Blueberries:

  • 1½ T harina
  • 1 T harina integral
  • 1 T azúcar
  • 2½ cdta polvo para hornear
  • 2 cdta sal
  • ½ cdta canela
  • 2 T blueberries
  • 2 huevos y dos yemas
  • 1½ T yoghurt natural
  • ½ T mantequilla, derretida
  • 1 cdta ralladura de limón
  • 2 cdta jugo de limón
  • 2 cdta vainilla
  • 2 Cda azúcar de vainilla o cruda

Calentar el horno a 220º. Engrasar un molde de panquecitos con spray. Mezclar las harinas, azúcar, polvo para hornear, y canela. Agregar 1 1/2 T de blueberries y mezclar. En otro bowl, mezclar la mantequilla, yoghurt, huevos, yemas, ralladura y jugo de limón, y vainilla. Mezclar todo junto y llenar los moldes de panqué. Poner blueberries encima de cada muffin y espolvorear con azúcar de vainilla. Hornear por 30 minutos aproximadamente, o hasta que queden dorados encima.
