The Healthiest Banana Muffins

These are the muffins you’ve been waiting for. Remember that time you were looking for a recipe with no sugar? or that time you wanted no butter? no oil? or that other time you needed chocolate but wanted no dairy? Well here it is, all in one. I will not tell you that you won’t taste a difference, because everything is better with sugar and butter. But I will tell you that this will satisfy your cravings and add work as the tastiest snack you’ve had in a while. I was about to leave for Mexico when I noticed 3 sad bananas waiting to be eaten. I turned them into their better state and froze them to have anytime I want. I recommend you do the same.

Recipe:

  • 1 2/3 white whole wheat flour or AP flour (I used whole wheat and I thought they were a bit dry)
  • 1 tsp baking soda
  • 2 Tbsp cocoa powder
  • 1 pinch salt
  • 1/3 cup honey
  • 1/3 cup greek yoghurt
  • 1/4 cup coconut oil, melted
  • 3 bananas
  • 1 tsp vanilla extract
  • 1 egg
  • 1/2 cup chocolate chips (or nuts)

Mash banana and mix with egg, vanilla, oil, honey, and yoghurt. In a separate bowl whisk flour, cocoa, baking soda, salt. Mix everything together and add chocolate chips. Scoop batter into tin with cupcake liners and bake for about 17minutes at 350ºF, or until tops are set (don’t let it dry).

Las recetas sin azúcar, harinas procesadas, mantequilla, aceite, leche, y todo lo bueno que la vida nos ha dado para engordar, difícilmente pueden llegar a quedar bien. Y no pedimos mucho, creo que es obvio que una receta light de repostería nunca va a salir tan bien como una tradicional y calórica. Pero no quiere decir que nos vamos a conformar y dejar de buscar la receta perfecta. Éstos muffins tienen puras cosas buenas y no saben a cartón. No saben a muffin de mantequilla tampoco, pero tienen lo suyo. En mi opinión, el harina integral los hace un poco secos, yo me quedaría con harina regular, pero todo lo demás (miel, yoghurt griego, plátanos, aceite de coco) nos hace sentir que estamos comiendo un snack completamente saludable y benigno. Son excelentes para congelar y recalentar cualquier día que tengan cravings de pan o chocolate 😉

Receta:

  • 3 plátanos maduros
  • 1 huevo
  • 1 cdta vainilla
  • 1/3 taza miel
  • 1/3 taza yoghurt griego
  • 1/4 taza aceite de coco
  • 1 2/3 harina
  • 1 cdta bicarbonato de sodio
  • 2 cda cocoa
  • 1 pizca de sal
  • 1/2 taza chispas de chocolate (o nuez)

Machacar los plátanos y combinarlos con la vainilla, huevo, miel, yoghurt, y aceite de coco derretido. En otro bowl mezclar el harina con la cocoa, bicarbonato y sal. Mezclar todo junto y agregar las chispas. Repartir en capacillos para muffins y hornear por aproximadamente 17 minutos a 220ºC.
