Best Banana Bread Ever

Soy fanática del panqué de plátano, y he probado todo tipo de recetas. Resulta que ésta (por mucho) les gana a todas. Es super húmeda, con muchísimo sabor, y los pedazos de chocolate le agregan un toque demasiado delicioso. Y sorprendentemente, la única grasa que lleva es aceite de coco. Yo lo hago siempre parve/dairy-free, usando leche de almendra, y chispas de chocolate semi amargo.

Receta

  • 3 plátanos maduros
  • ¾ taza azúcar
  • ½ taza azúcar morena/moscada
  • 2 huevos
  • ½ taza aceite de coco derretido
  • ¼ taza leche de almendra, o jugo de naranja
  • 1 ¾ taza harina
  • 1 cucharadita bicarbonato de sodio
  • 2 cucharaditas canela molida
  • 2/3 cucharadita de sal
  • 2/3 taza chispas de chocolate semi-amargo

Precalentar horno a 200ºC

1. Machacar los plátanos y mezclarlos con los azúcares, huevos, aceite de coco, y leche.

2. En un bowl diferente, mezclar el harina con el bicarbonato de sodio, canela, y sal.

3. Mezclar todo junto y agregar las chispas de chocolate.

4. Vertir en un molde preparado con aceite y enharinado, y meter al horno por 30-40 minutos.

5. Dejarlo enfriar (yo nunca logro esperar), y disfruta!

I’m a devoted fan of banana bread, and I’ve tried every recipe, every kind at coffee shops (please don’t try Starbucks’), and I’ve settled with this super moist, dairy-free, butter-free, amazing chocolate chip banana bread. This was originally pumpkin bread (which is delicious as well), but substituting with bananas makes it just as good or even better.  This is easy, quick, and amazing. My boyfriend who (says) he doesn’t even like dessert very much, has been eating it non stop. So go ahead and prove me right.

Recipe:

  • 3 ripe bananas
  • ¾ cups white sugar
  • ½ cup brown sugar
  • 2 eggs
  • ½ melted coconut oil
  • ¼ cup almond milk (or orange juice)
  • 1 ¾ all purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 2/3 teaspoon salt
  • 2/3 cup semi-sweet chocolate chips

Preheat oven at 350ºF/200ºC

1. Mash bananas and mix with sugars, eggs, coconut oil, and almond milk.

2. In a separate bowl mix flour, baking soda, cinnamon and salt.

3. Mix everything together, adding the chocolate chips.

4. Pour in prepared pan and bake for 30-40 minutes (or until the top springs back up when touched)

5. Let cool (or don’t) and enjoy!
